I have used Technics SX-P30 digital piano to drive the V5 usually
through a sequencer (Midisoft Recording Session - a very old
version - I've had occasional hanging notes when using a Roland
SC-7 sound module through it but none with V5..). I've used the V5
also by connecting it directly to the P30 but the problem is still
there. P30 sends only note on/off with velocity and sustain pedal
data. Usually when I push the drawbar all the way to zero and then
pull it out a little the "hanging drawbar" gets corrected.

Don't know if the AC adapter could have anything to do with it. I've
replaced the original US 12V AC adapter to a one which fits to the
local power (230V here in Finland..) with capability to a current draw
of 3A at 12V AC.
