congratulations. i know well the feeling of the first
hammond; last thursday i got my first, a '45 CV.

take a look at

for the pinouts of the two types of connections you
have. if you're not inclined to making your own cable,
then you should probably take a look at a combo
preamp, such as the UC-1A from Trek II, or an
equivalent. It'll allow you to provide power, speed
control, and audio (from a 1/4" cable from your vk-7).
one of the pins on the 760 provides a voltage to one
kind of these combo pre-amps. however, these things
are generally quite expensive.

if you want to make your own cable, you'll have to
provide AC to the 760 externally. from the pinouts, it
looks like your cable would look something like:

VK-7 760
---- ---
pin 4 (GND) pin 1
pin 1 (audio) pin 2
pin 2 (stationary audio) pin 4
pin 7 (leslie fast) pin 6
pin 8 (leslie slow) pin 7

additionally, you'll need to patch in an AC cable to
the 760 connector, to pins 8 & 9.

i've built similar cables. the connectors and end caps
are available from goff (http://www.goffprof.com).
